The research professorship (tenure track: associate or full professor) in Food Processing and ingredient technologies focuses on the development of novel processing concepts for raw materials from various proteinaceous sources, such as meat, dairy, proteinaceous plants, food side-streams and aquatic biomass for value-added food and feed products. Special emphasis should be put to sustainability, resource efficiency of the concepts as well as high technological and nutritional quality of end-products. Close interaction with industrial stakeholders in the value-chain is a necessity.
